Dr. Jeffries\, a scientist and a surgeon\, is considered one of America’s first weather observers. He kept weather records from 1774 to 1816. Additionally\, Jefferies pioneered the field of ballooning in the United States and took his first balloon observation in 1784. \nDuring this celebration\, those honored work hard to accurately forecast and report the constantly changing and often unpredictable weather. Despite new technological advances\, meteorologists face challenges in predicting the weather. Even with the most state-of-the-art technology\, predicting “Mother Nature” and what path she may choose is a very daunting task. \nKnowing the weather forecast is valuable to us in so many ways. We often look at the forecast to plan our activities for the upcoming days. It affects what we do\, how we dress\, where we go\, or even if we go at all.   Being prepared for impending storms\, hurricanes or tornadoes saves lives. \nTiny Alabama Town Shocked to Learn Farmer had Secretly Paid People’s Pharmacy Bills for a Decade \nNATIONAL WEATHER SERVICE:\n“The primary mission of the Weather Service (NWS) forecast office is to provide the American public with the best possible warning service to save lives. Recent severe weather statistics show that we continue to improve our capability to warn the public of impending hazardous weather. \nNationally\, lead time for flash flood warnings improved from 22 minutes in 1993 to 78 minutes in 2008. Accuracy over the same time period increased from 71 percent to 91 percent. Lead time for tornado warnings has increased from 6 minutes in 1993 to 13 minutes today. Tornado warning accuracy increased from 43 percent to 72 percent. Winter storm accuracy in 2008 was 89 percent with an average lead time of 17 hours. Since 1990\, the Tropical Prediction Center’s 24 to 72-hour tropical storm forecast track errors have been reduced by more than 50%. Many believe if the groundhog sees his shadow\, there will be six more weeks of winter. If this is so\, he retreats into his den and goes back to sleep. However\, if he does not see his shadow\, the groundhog remains outside to play\, and people celebrate\, believing spring is just around the corner. \nTradition\nThe tradition of predicting the length of the remaining winter is intertwined with the Christian holiday\, Candlemas. The clergy would bless candles symbolizing the ‘light of the world’ to give to their congregations. Another tradition associated with this day is eating crepes. Germans practiced the art of predicting the winter with a hedgehog. When they arrived in the United States\, they settled in the hills of Pennsylvania\, and the groundhog became the official predictor. \nPunxsutawney\, Pennsylvania\, has hosted the annual Groundhog day event. In America\, we often use the terms hot chocolate and hot cocoa interchangeably. However\, the two beverages are different. \n\n\n \nCocoa vs Hot Chocolate \nWe make hot cocoa with cocoa powder\, heated milk or water\, and sugar. We’re able to do this thanks to a process developed by father and son chemists. For the thicker\, more flavorful beverage\, we make hot chocolate from ground chocolate containing cocoa butter. It is also called drinking chocolate. Hot chocolate has also been around longer than hot cocoa. In the early 1800s\, Casparus van Houten Sr. developed a process to separate the cocoa solids from the butter. His son\, Coenraad Johannes made those fats more soluble in water. Together their processes made cocoa powder possible. \nBut before then\, everyone drank hot chocolate. This thicker\, creamier beverage often offered medicinal benefits for stomach ailments during the 19th century. In fact\, long before the beverage’s popularity in Victorian times\, it served in ceremonial culture. \nHowever\, humans have been drinking chocolate for a long time. The Mayans likely created the first chocolate beverage 2000 years ago. The Aztecs also included a cocoa beverage as an essential part of their culture by 1400 AD. When Europeans began exploring Central and South America\, explorers brought chocolate and the beverage back with them to Europe from Mexico. \n\n\n \nMake it and Benefit\nHot chocolate can be enjoyed in a variety of combinations\, topped with whipped cream or marshmallows. Sometimes a sprinkle of cinnamon or a dash of peppermint makes the chocolate extra special. In the United States\, many people enjoy an instant form of hot chocolate. It is made with hot water or milk and a packet containing mostly cocoa powder\, sugar\, and dry milk. \nThere are health benefits to drinking hot chocolate. Cocoa contains significant amounts of antioxidants that may help prevent cancer. DESCRIPTION:Holocaust Remembrance Day – Each year on January 27th\, the world remembers one of the most horrific events in modern history. This tragic event is known as the Holocaust. The holocaust occurred during WWII when Nazi Germany killed millions of innocent victims. The day is also known as Holocaust Remembrance Day. \n\n\n \n#HolocaustRemembranceDay\nNazi Germany is one of the evilest regimes that ever existed. They persecuted and killed millions of people in just under four years. One group in particular that suffered were those of the Jewish faith. It is believed that six million Jews were killed during the Holocaust. The Nazis’ persecution of the Jews became a genocide. \nGenocide occurs when those of a particular ethnic group is deliberately killed. However\, the Nazis killed more than just Jews. Hundreds of thousands of other groups of people died under the evil regime. These included: \n\n7 million Soviet civilians\n3 million Soviet prisoners of war\n1.8 million Polish civilians\n312\,000 Serb civilians\nUp to 250\,000 people with disabilities\nUp to 250\,000 Gypsies\nAround 1\,900 Jehovah Witnesses\nPossibly thousands of homosexuals\n\nMost Jews died in concentration camps. The most notorious concentration camp is Auschwitz\, where approximately one million Jews died. While some of the Jews in the concentration camps died from disease or starvation\, others died in the gas chambers. Other groups of people were forced to live in ghettos where they died of sickness or starvation. Still\, others were rounded up\, shot\, and buried in mass graves. \nMany famous books and movies have been produced about the holocaust. One of the most famous books is Anne Frank: The Diary of a Young Girl. The book is a real-life account of the two years that Anne Frank and her Dutch family hid from the Nazis. The family was discovered and deported to a concentration camp. Anne was 15 years old when she died in the camp from typhus. Other books include The Hiding Place by Corrie Ten Boom\, The Boy in the Striped Pajamas by John Boyne\, and Born Survivors by Wendy Holden. Movies include Schindler’s List\, The Reader\, Denial\, and The Devil’s Arithmetic. \nThere are many other works\, such as theater productions\, music\, and poetry. Many of the works were created by victims and survivors of the holocaust. Other works commemorate the many heroes who helped save thousands of Jews and other victims from certain death. \n\n\n \nHOW TO OBSERVE HOLOCAUST REMEMBRANCE DAY\nMany events are held throughout the world to commemorate this solemn day. The United Nations hosts a Holocaust memorial ceremony. The ceremony includes testimonies by Holocaust survivors\, special music\, and memorial prayers. There are also photographic exhibits\, panel discussions\, film screenings\, and book signings. Sadly\, there are some that try to deny the holocaust ever happened. This is one more reason to take part in this day. If the holocaust is forgotten or denied\, it will be easier for history to repeat itself. Later that year on November 1\, the UN General Assembly designated January 27th as the International Day of Commemoration in Memory of the Victims of the Holocaust. DESCRIPTION:National Chocolate Cake Day celebrates the cake more people favor. And more often than not\, we celebrate our special occasions like anniversaries\, birthdays and weddings with cake. Why not enjoy chocolate cake on January 27th every year? \n\n\n \n\n#ChocolateCakeDay\n\nIn America\, chocolate was consumed primarily as a beverage until the 1830s or 40s. Chocolate cakes\, as we think of them today\, mostly did not exist then.  According to the Dover Post\, the chocolate cake was born in 1765 when a doctor and a chocolate maker teamed up in an old mill.  They ground up cocoa beans between huge millstones to make a thick syrup. The liquid was poured into molds shaped like cakes\, which were meant to be transformed into a beverage.  A popular Philadelphia cookbook author\, Eliza Leslie\, published the earliest chocolate cake recipe in 1847 in The Lady’s Receipt Book.  Unlike chocolate cakes we know today\, this recipe used chopped chocolate.  Other cooks of the time such as Sarah Tyson Rorer and Maria Parloa all made contributions to the development of the chocolate cake and were prolific authors of cookbooks. \nThe first boxed cake mix was created by a company called O. Duff and Sons in the late 1920s. Betty Crocker released their first dry cake mixes in 1947. \n\n\n \nHOW TO OBSERVE CHOCOLATE CAKE DAY\nWhen it comes to food holidays\, we know how to celebrate. DESCRIPTION:National Irish Coffee Day kicks off January 25th each year with a mug of strong coffee\, Irish whiskey\, sugar\, and topped with a layer of cream. \n\n\n \n#NationalIrishCoffeeDay\nOn a cold\, wet day in 1942 weary travelers to the small Shannon Airport in southwest Ireland found their way to a restaurant and chef Joe Sheridan. To warm his guests\, he served them hot coffee\, spiked with whiskey and topped with whipped cream. The passengers asked if the beverage was Brazilian coffee. After much trial and error\, sampling\, and a trip back to Ireland for a taste of the original\, Delaplane\, along with Buena Vista owners Jack Koeppler and George Freeberg\, were able to replicate the delicious coffee and the method for floating the cream on top of the coffee. \nHow to Make an Authentic Irish Coffee\nStarting with a warm glass\, fill 2/3rds full of freshly brewed coffee. Stir in a heaping teaspoon of sugar.  Add 1 ounce of Irish whiskey. \nAdding the cream\, so it floats is the tricky part. According to the Buena Vista account\, and at the suggestion of San Francisco’s mayor\, a dairyman\, cream that is 48 hours old\, is best. At the turn of the century\, inventions that made planting\, cultivating\, and harvesting the legume (the peanut isn’t a nut at all) made it possible to see the peanut as a retail and wholesale food item.\n\nPeanut butter is a good source of vitamin E\, B6\, niacin\, calcium\, potassium and iron\, is packed with protein and is rich in healthy monounsaturated fat. \n\n\n\n\nBringing Peanut Butter to the Masses\nWe can thank four men for the inventions and processes that bring us the creamy\, smooth peanut butter we enjoy today: Marcus Gilmore Edson of Canada\, Dr. John Harvey Kellogg\, Dr. Ambrose Straub of St. Louis\, Missouri\, and chemist Joseph Rosefield. \nIn 1884\, Edson developed a process to make peanut paste from milling roasted peanuts between two heated plates. The famous cereal maker and health food specialist of the time\, Kellogg\, patented a process with raw peanuts in 1895. Dr. Straub is responsible for patenting a peanut butter making machine in 1903. \nPeanut butter was introduced to audiences at the 1904 Universal Exposition in St. Louis at C.H. Sumner’s concession stand. \nBut the man who brought us the peanut butter we know and love today was Joseph Rosefield. In 1922\, through homogenization\, Rosefield was able to keep peanut oil from separating from the peanut solids. He later sold the patent to a company that began making Peter Pan peanut butter. Rosefield then went into business for himself selling Skippy peanut butter through Rosefield Packing. DESCRIPTION:Though Celebration of Life Day\, which lands on January 22\, was originally instituted to celebrate the children in our lives\, it has come to signify all that’s good about being alive. It’s easy to forget sometimes\, but we are all fortunate to be here. Take time to celebrate that the good far outweighs the bad in this life. It all starts with gratitude and appreciation for where you are right now\, and wherever you hope your dreams take you. Every life is precious\, individual\, and a huge gift\, so take a little extra time today to celebrate it. \n\n\n \nThough Ronald Regan originally established the holiday to send an anti-abortion message\, the Celebration of Life Day has come to be a day to celebrate both the lives of children and ourselves. Celebration of Life Day was originally called National Sanctity of Human Life Day and was proclaimed in January 1984 by Ronald Regan. At the time\, President Regan chose to harken back to the landmark abortion case Roe v Wade by placing National Sanctity of Human Life Day on the 11-year anniversary of the decision on the case. \nAnti-abortion groups championed the holiday and felt that it expressed their sentiments on the importance of human life at all stages. This belief has been echoed in Donald Trump’s statement on the day from 2019. Organizations who champion the right to choose\, like Planned Parenthood\, denounced the day as a way of limiting women’s rights to autonomy over their bodies. \n\n\n \nThe history of National Sanctity of Human Life/Celebration of Life Day has been rocky. Though both Bush presidencies continued the holiday\, it was discontinued for eight years under President Bill Clinton. Donald Trump has continued the holiday throughout his presidency\, as well\, and some churches have even marked it as a holy day on their calendars. The holiday routinely falls on a Sunday for this religious reason\, although only in 2018 Donald Trump proclaimed it be celebrated on a Monday. \nToday\, many view the Celebration of Life Day as a day to spend extra time with their nieces\, nephews\, children\, grandchildren\, or even just kids they babysit. Every human life is precious\, and today is the day to remind ourselves we are all lucky to be here and lead the lives we do. In the U.S\, one-third of all milk produced in this country goes into cheese production. It’s a multi-billion dollar industry! We’re ready to celebrate it. \n\n\n \n\n\n\n\nWe celebrate and explore the wonderful flavors of cheese on National Cheese Lovers Day on January 20. \nIt seems like cheese has been around forever. There aren’t any records pinpointing the exact event when cheese was created\, but the earliest record of pasteurizing cheese dates back to 5500 B.C. in the geographical region that’s now Poland. The earliest cheeses were mostly cottage cheese churned at home\, and this is likely how cheesemaking started. \nThousands of years ago\, milk was transported by people by storing it in the stomachs of sheep. When left for a few days\, the milk would separate into whey and curd. Retaining this residue and preserving it with salt led to the formation of cheese. Today\, there are more than 1\,800 types of cheese in the world. \n\n\n \nThe rest of the history of cheese is as extravagant and full of flavor as cheese itself. Enjoyed by royalty\, the poor\, and modern-day consumers\, there is something for everyone. Some parts of the world are very secretive about their cheese heritage\, keeping the ingredients and techniques private. \nCheesemaking itself is a very sensitive process. Everything from the environment\, to the temperature of the milk will impact the taste and aroma of the cheese.

Just be prepared to dig some of it out of your teeth.Salted\, buttered\, or caramel\, National Popcorn Day celebrates this delectable snack on January 19. \n\n\n \n\n\n\n\n\n\n\n\n\nDid you know that the corn we eat and the corn we pop are two different varieties of maize? In fact\, the corn you’d find on your dinner table is most likely unable to pop at all! Only one variety of corn is able to become popcorn: Zea mays everta. This particular corn variety has small ears\, and the kernels burst when exposed to dry heat. \nIn 1948\, small heads of Zea mays everta were discovered by Herbert Dick and Earle Smith in the Bat Cave of west central New Mexico. Ranging from smaller than a penny to about two inches\, the oldest Bat Cave ears were about 4\,000 years old. Several individually popped kernels were also discovered\, which have since been carbon dated and shown to be approximately 5\,600 years old. There’s also evidence of early use of popcorn in Peru\, Mexico\, and Guatemala\, as well as other places in Central and South America. \n\n\n \nAztecs used popcorn to decorate their clothes\, create ceremonial embellishments\, and also for nourishment. Native Americans have also been found to consume and utilize popcorn in their day to day lives. In a cave in Utah\, thought to be inhabited by Pueblo Native Americans\, popcorn has been found that dates back to over 1\,000 years ago. French explorers who traveled to the new world discovered popcorn being made by the Iroquois Natives in the Great Lakes region. As colonists moved around North America\, and as the USA came to be\, many people adopted popcorn as a popular and healthy snack.

King was an influential civil rights leader — best known for his work on racial equality and ending racial segregation in the United States. His life and achievements are remembered and celebrated on this day.\n\n\n\n\n\n\n\n\n\nThe concept of Martin Luther King Jr. Day as a holiday was promoted by labor unions. After King’s death\, U.S. Representative John Conyers and U.S. Senator Edward Brooke introduced a bill in Congress to make King’s birthday a national holiday. The bill first came to a vote in the U.S. House of Representatives in 1979; however\, it fell five votes short of the number needed for passage. Two of the main arguments mentioned by opponents were that a paid holiday for federal employees would be too expensive and that a holiday to honor a private citizen would be contrary to longstanding tradition\, as King never held public office. At the time\, only two other figures had national holidays honoring them: George Washington and Christopher Columbus. \n\n\n \nSoon after\, the King Center looked for support from the corporate community and the general public. The success of this strategy was cemented when musician Stevie Wonder released the single ‘Happy Birthday’ to popularize the campaign in 1980 and hosted the Rally for Peace Press Conference in 1981. Six million signatures were collected for a petition for Congress to pass the law and is considered the largest petition in favor of an issue in U.S. history. \nPresident Reagan originally opposed the holiday\, citing cost concerns. But on November 2\, 1983\, Reagan signed a bill\, proposed by Representative Katie Hall\, to create a federal holiday honoring King. The bill had passed the Senate by a count of 78 to 22\, and the House of Representatives by 338 to 90. The holiday was observed for the first time on January 20\, 1986. It’s observed on the third Monday of January rather than directly on Martin Luther King\, Jr.’s birthday because it follows the guidelines of the Uniform Monday Holiday Act.
